Ingredients

Cake Pops

  • 1 box vegan chocolate cake mix

  • 1 pint Vegan Brownie Batter Doughp, room temperature

  • 4 oz vegan cream cheese, room temperature

  • Cake pop sticks.

Toppings

  • 12 ounce bag vegan chocolate chips

  • 1 tbsp coconut oil

  • Mini chocolate chips

Directions

    1. Make the chocolate cake according to package directions. Once the cake is done, let cool completely.

    2. In a large mixing bowl, add the Vegan dough and vegan cream cheese. Mix with an electric mixer until combined.

    3. Crumble the baked and cooled chocolate cake into the cream cheese/dough mixture. Mix thoroughly until completely combined.

    4. Roll about 2 tbsp of the cake pop mixture into a ball. Repeat with the remaining dough and place in the freezer for 10 minutes.

    5. Meanwhile, melt the chocolate chips and coconut oil in a microwave safe bowl in 20 second increments, stirring between until melted.

    6. Take the chilled balls out of the freezer. Dip the top of one of the sticks into the melted chocolate, and stick into the center of one of the cake pop balls. Repeat with the remaining balls. Place back into the freezer for 20 minutes to allow the chocolate to completely set.

    7. Once the cake pops are set, dip them into the melted chocolate to fully cover the cake pop. Alternatively, you can also only dip half of them into chocolate, leaving the other half bare. If desired, roll in mini chocolate chips.

    8. Place back into the freezer to set for another 20 minutes and enjoy!
